Brown Sugar Oatmeal Coconut Cookies Recipe
Ingredients
1/2 cup all-purpose flour
1/2t. baking soda
Dash salt
1/2 cup vegetable shortening, melted
3/4 cup granulated brown sugar replacement
1/4 cup granulated fructose
1 egg
1/2 tsp vanilla extract
1 cup quick-cooking oatmeal
1/3 cup unsweetened coconut
Directions
Sift together flour, baking soda, and salt; set aside.
Using an electric mixer, beat shortening, brown sugar replacement, and fructose on Medium until well blended.
Add egg and beat well.
Gradually stir flour mixture into creamed mixture.
Stir in vanilla extract.
Stir in oatmeal and coconut.
Shape dough into balls, and place on greased cookie sheet.
Bake at 325°F (165°C) for 12 to 15 minutes.
Move to cooling racks.
