Ingredients
| Long Grain Brown Rice - measured to 8 fluid level ounce in a measuring jug | ||
| Boiling water - measured to 16 fluid ounce level in a measuring jug | ||
| Carrot | 1 (For the Rice) | |

| Onion - 1 medium, roughly chopped | ||

| Cauliflower | 4 Ounce (For the Garnish) | |
| Chinese Cabbage | 4 Ounce, shredded (For the Garnish) | |

Directions
MAKING
1) Into a thick based saucepan, melt the butter and oil together and then add the onions, carrots, and celery
2) Sauté the for about 5 minutes till they are well coated with the oil.
3) Season with salt and add boiling water.
4) Then add in the rice, cover and cook undisturbed for 45 minutes till rice is done
5) To make the sauce, into a saucepan add the and over medium heat continuously whisk till the sauce has thickened
6) Let the sauce come to a gently simmer, and let it simmer for 8 minutes
7) Grate half the cheese and set the pan aside
8) Before the rice gets ready, into a pan heat some oil and sauté the cauliflower florets for 5 minutes
9) Add the shredded cabbage and sauté for 5 minutes till its cooked
10) Layer the rice onto a large oven proof serving dish topped by the vegetables
11) Pour the cheesy sauce on top and grate remaining cheese on top
12) Bake the rice dish till the rice is all melted and the top gives a nice golden colour
