Brown Rice With Chicken Recipe
Ingredients
4 tablespoons vegetable oil
1 cup raw brown rice, rinsed and drained
3 cups boiling homemade chicken broth
2 celery stalks, chopped
2 onions, chopped
1 cup diced cooked chicken
1 tablespoon dry white wine, optional
1 tablespoon finely ground unblanched almonds
Directions
1. Heat 3 tablespoons oil in a saucepan and add the rice. Cook rice, stirring, until all the grains are coated with oil.
2. Add the broth, cover, and simmer gently until the rice is almost tender, about 40 minutes.
3. Meanwhile, heat the remaining oil and saute the celery and onions until tender. Add to the rice with the wine and almonds and cook for 5 minutes longer.
