Brown Rice Salad Recipe
Brown Rice Salad is a marvelous item to prepare for family meals. Best enjoyed as a Side Dish this recipe was taught to me by a dear friend who also happens to be a great chef. Ingredients
1 cup (250 mL) brown rice, uncooked
2 tbsp (30 mL) oil of your choice
1 small onion, peeled and thinly sliced
1 medium green pepper, cut into thin strips
1 small red pepper, cut into thin strips
1 tbsp (15 mL) red wine vinegar or tarragon vinegar
Salt and pepper to taste
1/4 tsp (1 mL) marjoram or basil
Directions
€¢ Microwave the brown rice according to directions for brown rice in the Rice Cooking Chart.
€¢ In a 4-cup (1 L) microwave-safe dish heat the oil 2 minutes at HIGH. Add the onion, green and red peppers. Stir always with a fork in this recipe until well coated with the oil. Microwave 4 minutes at MEDIUM-HIGH, stir well.
€¢ Add the cooked brown rice and the remaining ingredients, stir again. Microwave 2 minutes at MEDIUM, stir. Adjust seasoning.
