Ingredients

 
3 cups brown rice
 
1/3 cup sunflower seeds
 
1/3 cup sliced almonds
 
Zucchini
 
Red onion
 
1/2 cup parsley
 
3/4 cup carrots
 
3/4 cup celery
 
3/4 cup red bell pepper
 
3 tablespoons vinaigrette

Directions

Place the cooked and cool brown rice in a medium-size bowl.
Cut the red peppers and add to the rice.
Cut the zucchini and add to the rice.
Cut the red onion into small pieces and add to the rice.
Cut the celery into finely pieces and add to the rice.
Take some almonds and toast them.
When the almonds are cold enough, you can add to the rice.
Add some carrots to the rice.

For Vinaigrette:
Chop the garlic and put in a bowl. Add some vinegar, Dijon mustard or pepper, olive oil and mix it. Add few lemon juice.
Pour this vinaigrette in the salad.
Mix the salad.
Garnish the salad with sunflower sprouts and parsley.
