Brown Rice Loaf With Avocado Sauce Recipe
Ingredients
1 cup cooked brown rice
3 carrots, finely grated
3 eggs, lightly beaten
3 scallions, finely chopped
1 cup raw cashews, finely chopped
1/2 teaspoon dried oregano or mixed Italian herbs
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup shredded Monterey Jack or mild Cheddar cheese
Avocado sauce
Directions
1. In a large bowl mix the cooked rice, carrots, eggs, scallions, nuts, oregano, salt, pepper, and cheese.
2. Pack into an oiled 8 & 1/2- by 4 & 1/2-by 2 & 1/2-inch loaf pan. Cover with aluminum foil and bake in a 350-degree oven for 45 minutes. Remove the foil and cook for 10 minutes longer.
