Brown Potato Soup Recipe
Ingredients
6 medium-sized potatoes, peeled and diced
1 medium-sized onion, diced
Water
2 1/2 cups peeled, chopped fresh or canned tomatoes
4 tablespoons unbleached white flour
1 tablespoon butter
Salt and freshly ground pepper
Directions
1. Put the potatoes and onion in a saucepan and add water to cover. Bring to a boil and simmer for 15 minutes. Add the tomatoes and simmer for 5 minutes longer.
2. Meanwhile, put the flour and butter in a small, heavy skillet and heat slowly, stirring constantly, until the flour browns. (Do not allow to bum or it will be bitter.) Stir into the simmering vegetable mixture.
3. Season with salt and pepper to taste. If the mixture is too thick, add more water.
