Ingredients

 
3 tablespoons lard
 
1 teaspoon Creole or French mustard
 
1 large onion, minced
 
2 teaspoons flour
 
2 tablespoons sweet pickles, cut up small
 
1 can clear consomme
 
1 1/2 cups sherry
 
1 teaspoon pickle liquor

Directions

Melt the lard in a saucepan, add the onion, and fry slowly for 10 minutes or until the onion is brown.
Add flour, stir for 5 minutes, then pour in the consomme.
Let boil 10 minutes.
Add the sherry and simmer 30 to 40 minutes.
Just before serving, add the mustard and pickles.
Pour over chops and serve.
