Choose active live lobsters.
Plunge headfirst into enough boiling, salted water to cover.
Cook 2 minutes.
Remove.
Place lobster on back on cutting board.
With sharp knife, split lengthwise from head to tail.
Cut off head, if desired.
Using scissors, snip out under shell membrane on tail section.
Discard all organs in body section except red coral roe (in females only) and brownish green liver.
Remove black vein.
Crack large claws of the lobster.
Place lobster on broiler pan, shell side up; broil about 5 inches from heat 7 minutes.
Turn; flatten lobster open to expose meat.
Brush with 1 tablespoon melted butter.
Season with salt and pepper.
Broil 7 to 8 minutes longer.
Serve with melted butter and lemon wedges.
Allow a 1-pound lobster for each serving.
