Directions

GETTING READY
1) Preheat the broiler.
2) Line an ovenproof tray with foil. Lightly oil the foil.

MAKING
3) Place the salmon filets on the oiled foil and season them with some black pepper.
4) Coat the seasoned fish with the Romesco sauce.
5) Sprinkle salt all over the fish.
6) Broil the salmon for about 10 minutes, about 5 inches away from the heat source.

SERVING
7) Serve the broiled filets while they are still hot. A light, green salad can be served on the side, if preferred.

I love salmon but run out of healthy and low calorie ways to cook it. I am usually on a high protein diet and have lots of salmon fillets stocked in my freezer. I make this delicious spicy salmon for dinner and spend the evening relaxing and watching TV once I get back from work, instead of slogging in the kitchen to cook a healthy meal. All you need is 5 minutes in the kitchen to make this salmon dish. It goes really well with a fresh green salad on the side and so you can easily avoid the carbs.
