Broiled Marinated Chuck Steak Recipe
Ingredients
1 cup each beer and sliced onions
1 medium tomato, thinly sliced (about 1/8-inch-thick slices)
1 tablespoon grated lemon peel
1 garlic clove, sliced
1 tablespoon chopped fresh parsley
1/2 teaspoon each salt and pepper
1 1/2 pounds chuck steak (about 2 inches thick)
Directions
In self-sealing plastic bag or a glass or stainless-steel bowl combine beer, onions, lemon peel, and seasonings; add steak, turning to coat with marinade.
Seal bag or cover bowl and refrigerate for at least 8 hours, turning meat several times in marinade (if bag is used, simply turn bag over).
Preheat broiler.
Transfer steak to rack in broiling pan, discarding marinade; broil 3 inches from heat source until steak is browned on both sides, 5 to 7 minutes on each side, or until done to taste.
Arrange tomato slices over surface of steak and broil until tomatoes are lightly browned; serve sprinkled with parsley.
