Directions

Have a 4—6-pound turkey split in half by the butcher.
Wipe clean.
Skewer wing close to side.
Rub skin with lemon, oil, salt, and melted fat.
Place, skin side down, in pan without rack.
Broil 8—10 inches from heat about 40 minutes or until nicely browned.
Turn skin side up, and baste with pan drippings.
Broil until brown and done, about 40 minutes longer.
