Broiled Garlic Shrimp (Scampi All'Aglio) Recipe
Ingredients
1 lb (500 g) large shrimp
1/4 cup (62.5 g) butter or margarine
3 tablespoons olive oil
11/2 teaspoons lemon juice
1 scallion, finely chopped
1 garlic, crushed
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped parsley
lemon wedges
Directions
Shell, devein and quickly wash and dry the shrimp.
Melt the butter or margarine in a large shallow baking dish.
(It must be able to fit under the broiler).
Add the olive oil, lemon juice, scallion, garlic, salt and pepper.
Add the shrimp and turn them over in the mixture until they are completely coated on all sides.
Place under a very hot broiler.
If the shrimp are uncooked, cook them for about five minutes on one side, then turn and cook for another five to ten minutes.
If the shrimp are cooked, they must be thoroughly heated.
Serve garnished with chopped parsley and lemon wedges.
