Broiled Turkey With Savory Fruit Marinade Recipe
Ingredients
1 orange
4 scallions
2 cloves garlic, minced or crushed through a press
2 tablespoons chopped parsley (optional)
2 tablespoons orange marmalade or apricot jam
1 tablespoon olive or other vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
4 turkey cutlets
Directions
1 Preheat the broiler. Line a baking sheet with foil and grease it lightly.
2 Peel the orange and remove all of the bitter white pith. Coarsely chop the orange and place it in a medium bowl. Coarsely chop the scallions and add them to the orange.
3 Stir in the garlic, parsley (if using), marmalade (or apricot jam), oil, salt and pepper.
4 Place the turkey cutlets on the prepared baking sheet and coat with half of the orange mixture. Broil 4 inches from the heat until browned, about 4 minutes.
5 Turn the turkey over and coat with the remaining orange mixture. Broil 4 inches from the heat until the turkey is cooked through and the topping is golden, about 5 minutes.
