Broiled Tomatoes Recipe
Ingredients
4 medium sized red ripe tomatoes
1/2 cup freshly made breadcrumb
3 Tb. finely chopped parsley
2 Tb. chopped chives
1/2 tsp. oregano
1 clove garlic, finely chopped
Salt and pepper
6 tsp. butter
Directions
Cut each tomato in half horizontally and place in a lightly oiled skillet.
Combine the breadcrumbs, parsley, chives, oregano and garlic.
Place a little of the mixture on top of each tomato, pressing it down lightly.
Season each tomato half with salt and pepper and dot with butter.
Place in a preheated 350° oven for 10 minutes and then under the broiler for three minutes until the crumbs are lightly browned.
Combine the breadcrumbs, parsley, chives, oregano and garlic.
