Broiled Steak Recipe
Ingredients
| 1/3 to 3/4 lb. with bone or 1/2 to 1/2 lb. boneless for each | ||
| Club Sirloin | ||
| Porterhouse Tenderloin | ||
| 1" thick 2" thick | ||
| Rare: 5 min. each side 16 min. each side | ||
| Medium: 6 min. each side 18 min. each side | ||
| Well Done: 8 min. each side 20 min. each side | ||
Directions
Prepare steak for broiling by slashing through outside fat every inch or so to prevent meat from curling during broiling.
Set oven regulator at "broil" or 550°.
Place steak on rack in broiler pan so that the top surface is about 2" from heat. (Close door on gas range; leave it ajar on electric range.) Broil top side specified time, season broiled side with salt and pepper.
Turn meat with kitchen tongs.
Broil other side; season.
