Broiled Salmon With Lemon Mayonnaise Recipe
Ingredients
1 lemon
1/2 cup mayonnaise
2 tablespoons chopped parsley (optional)
1/4 teaspoon salt
1/4 teaspoon pepper
4 salmon fillets
Directions
1 Preheat the broiler. Line a broiler pan with foil and lightly grease the foil.
2 Grate the lemon to make 1 tablespoon zest. Squeeze the lemon to make 2 tablespoons of juice.
3 In a small bowl, combine the mayonnaise, lemon juice, lemon zest, parsley (if using), salt and pepper.
4 Place the salmon fillets skin-side down on the prepared broiler pan. Spread them with half of the mayonnaise mixture.
5 Broil the fish 4 inches from the heat until the topping is golden, about 8 minutes.
