 Salmon steaks - 6, 1 inch thick
 Olive oil - 2 to 3 tablespoons
 Salt To Taste
  black pepper1
 Butter6 Tablespoon (Snail Butter:)
 Garlic - 1 to 2 cloves, crushed
 Shallot - 1/2 tablespoon, very finely chopped
 Parsley - 1 tablespoon, very finely chopped

Directions

MAKING
1 For snail butter: In a bowl, add butter and beat with a wooden spoon until slightly softened.
2 Add garlic for flavour and beat until throughly blended.
3 Beat in shallots and parsley and add slat and peppr for seasoning.
4 Form 6 small balls with the butter and arrange on a dish.Chill until firm.(Cover dish tightly with foil or plastic to avoid a strong garlic odor permeating other dishes in the refrigerator.)
5 For salmon: Preheat the broiler for 20 minutes.
6 Apply olive oil on both sides of the steaks using a brush and sprinkle with salt and pepper.
7 On a rack in the broiler pan,arrange the steaks side by side.
8 Reduce the oven temperature to 375 degrees farenheit and let the steaks broil for 16 - 20 minutes ,turning them once.
9 Consider done if the fish flakes easily when tested with a fork.

SERVING
10 Arrange the steaks on to a heated serving platter.
11 Pat generously with chilled snail butter and serve immediately.
