Broiled Salmon McCole Recipe
Ingredients
| 1-1/2 to 2 lbs. skinless salmon fillets or other skinless firm-texture fish fillets | ||
| Butter/Margarine | 1/2 Cup (16 tbs) | |
| 3 to 4 tablespoons prepared whole-seed mustard | ||
| 2 tablespoons finely chopped shallots or onion | ||
| Lemon juice | 1 Tablespoon | |
| Paprika | 1 Teaspoon | |
| Red cayenne pepper | 1 Pinch | |
| Salt | To Taste | |
Directions
Purchase 6 individual fillets or cut large fillets into 6 servings.
Preheat broiler.
Grease a broiling pan; place fillets on greased pan.
Melt butter or margarine in a small saucepan.
Stir in mustard, shallots or onion, lemon juice, paprika and red pepper.
Add salt to taste.
Spoon mustard sauce evenly over fillets.
Broil 4 to 6 inches from heat, 4 to 6 minutes or until fish tests done and top coating is browned.
