Broiled Peaches With Amaretti Cookies Recipe
Ingredients
| 4 ripe peaches, peeled, pitted and cut into 1/4" slices | ||
| Lemon juice | 1 Tablespoon | |
| Almond extract | 1 Teaspoon | |
| Vanilla | 1 Teaspoon | |
| 1/2 cup ground amaretti cookies | ||
| Ground cinnamon | 1 Teaspoon | |
Directions
In a medium bowl, toss together the peaches, lemon juice, almond extract and vanilla.
Set aside.
In a small bowl, toss together the cookies and cinnamon.
Spread the peaches on a baking sheet and broil about 5" from the heat for 5 to 7 minutes, or until tender.
Leave the broiler on.
Sprinkle the cookies over the peaches and return to the broiler.
Broil for 1 to 2 minutes, or until the topping is golden brown.
