Broiled Oysters With Watercress Recipe
Ingredients
| 1 bunch watercress, stalks trimmed off and leaves finely chopped | ||
| Cream | 1/4 Cup (16 tbs) | |
| Lemon juice | 1 Teaspoon | |
| Cayenne pepper | 1 Pinch | |
| Salt | To Taste | |
| Parmesan cheese | 2 Tablespoon, grated | |
| 12 ysters, cleaned and top shells removed | ||
| 2 tablespoons dried white bread crumbs | ||
Directions
Preheat the broiler to moderate.
Put the watercress, cream, lemon juice, cayenne pepper and salt in a small saucepan and cook over low heat until the watercress is cooked.
Rub the mixture through a fine sieve into a small bowl and stir in the cheese.
Lay the oysters on a broiler pan.
Spoon the sauce equally over each oyster and sprinkle with the bread crumbs.
Place the pan under the broiler for 5 minutes or until the top is golden and bubbling.
Serve hot.
