Broiled Flounder A La Moutarde Recipe

4 skinless and boneless flounder fillets
 
Freshly ground black pepper (7 turns of the pepper mill)
 
1 tablespoon olive oil
 
2 tablespoons Dijon mustard
 
2 tablespoons chopped chives
 
4 lime wedges

Directions

1. Preheat the broiler.
2. Arrange the fillets on a baking sheet or in a baking dish, and sprinkle them with pepper. Then pastry-brush them with the oil.
3. Using a pastry brush, spread the mustard evenly over the fish.
4. Put the fillets into the broiler, about 3 inches from the heat source. Broil for about 2 minutes, or until golden brown. Do not overcook. Place on individual dishes, sprinkled with chives and accompanied by a wedge of lime.
