Broiled Fish With Cucumber Sauce Recipe
Ingredients
| Butter/Margarine | 2 Tablespoon, melted | |
| 2 tablespoons minced seeded cucumber | ||
| Yellow onion | 1/2 Small, peeled | |
| 2 dashes liquid hot red pepper seasoning | ||
| Lemon juice | 1 Tablespoon | |
| Parsley | 1 Tablespoon, chopped | |
| 1 haddock, cod, or halibut fillet (about 6 ounces) | ||
| Salt | 1/8 Teaspoon | |
| Black pepper | 1/8 Teaspoon | |
Directions
1. Preheat the broiler. In a small bowl, combine the butter, cucumber, onion, red pepper seasoning, lemon juice, and parsley. Spread about one third of this mixture on the bottom of an 8"x 8"x 2" baking pan. Place the fish fillet in the pan, and top with the remaining mixture. Sprinkle with the salt and pepper.
2. Broil 5 inches from the heat for 10 minutes or longer, depending on the thickness of the fish. Baste the fish twice with the liquid in the pan. When the fish flakes easily when tested with a fork it is done.
