Ingredients

 Vegetable oil spray
 Fish fillets1 1/2 Pound
 Onion2 Tablespoon, chopped
 Celery1/2 Cup (16 tbs), chopped
 Water3 Tablespoon
 2 cups plain, coarse bread crumbs
 Ground black pepper To Taste
 1/4 cup chopped cooked spinach
 Thyme1/2 Teaspoon
 1 egg white, slightly beaten
 Skim milk1/4 Cup (16 tbs)
 1/2 cup plain, fine cracker crumbs
 Flour2 Tablespoon
 Parsley1 Teaspoon, chopped

Directions

Preheat broiler.
Lightly spray a broiler pan with vegetable oil.
Rinse fish and pat dry.
Set aside.
Combine onion, celery and water in a saucepan over medium-high heat.
Bring to a boil, cover and simmer until vegetables are tender.
Remove from heat.
Add bread crumbs, pepper, spinach and thyme.
Mix well, adding more water to moisten if necessary.
Place some of mixture on each fillet.
Roll up fish and fasten with toothpicks.
In a small, shallow bowl, combine egg white and milk.
Stir until well mixed.
Set aside.
In another small, shallow bowl, combine cracker crumbs and flour.
Set aside.
Roll stuffed fillets in egg-white mixture, then in cracker-crumb mixture.
Place fish rolls on prepared broiler pan and place in broiler 4 to 5 inches from heat.
Cook 5 to 7 minutes on first side, turn carefully and cook about 5 minutes more, or until fish flakes easily with a fork.
Remove toothpicks, sprinkle parsley on top and serve hot.
