Broiled Eggplant Recipe
Ingredients
| 1/4 cup dry bread crumbs or corn flake crumbs | ||
| Parmesan cheese | 2 Tablespoon, grated | |
| Salt | 1 1/2 Teaspoon | |
| Garlic salt | 1 Dash | |
| Eggplant slice | 8 , peeled | |
| 1 egg, slightly beaten | ||
Directions
Combine bread crumbs, cheese, salt and garlic salt.
Dip eggplant slices in egg, then coat with crumb mixture.
Place in shallow baking pan.
Broil 5 to 7 inches from heat for 3 to 5 minutes; turn slices over and continue broiling for 3 to 5 minutes until tender.
Serve hot.
