Broiled Duck Recipe

Ingredients
2 ducks (3 1/2-4 pounds each), at room temperature
2 large cloves garlic, peeled and mashed
Juice of 2 lemons
Salt and fresh pepper to taste
Directions
Wash and dry ducks thoroughly.
Remove any visible interior fat.
Remove tail and backbone by cutting on either side of backbone from neck to vent.
Cut on other side from breast to vent.
Cut each duck into 4 pieces.
Rub pieces on each side with garlic.
Place ducks, bone side up, on broiler rack over roasting pan to catch the grease.
Squeeze lemon juice on ducks.
Sprinkle with salt and pepper.
Place 4-6 inches from broiler unit and broil 15 minutes.
Remove pan from oven, pour off fat, and turn pieces skin side up.
Squeeze lemon juice over duck, sprinkle with salt and pepper, and return to oven.
Continue to broil for 20-25 minutes.
If duck is getting too brown or charred, move to a lower position in oven.
