Broiled Black Sole Recipe

Melted butter
Directions
Make an incision about 1 1/2 inches long halfway down the spine of the fish.
Make 2 pockets on either side of the incision with a sharp knife and insert a piece of butter into each of these.
This will keep the flesh from becoming dried up.
Now brush the fish with melted butter and put it under the broiler, resting on a piece of greased aluminum foil, until the uppermost side looks cooked about 2 to 3 minutes, according to size.
Turn and cook on the other side.
The foil will keep the fish from sticking.
