Broiled Beef Kidneys Recipe
Ingredients
| 2 beef kidneys | ||
| French dressing | 1/2 Cup (16 tbs) | |
| Butter/Margarine | 2 Tablespoon, melted | |
| Lemon juice | 1 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| Paprika | 1/2 Teaspoon | |
| Hot buttered slice | 4 | |
Directions
1. Wash the kidneys, cut them in halves, remove the white center and tubes. Soak them in cold water to cover with 1/2 teaspoon of salt 3 hours. Drain them and dry on paper towels.
2. Cover with the French Dressing and let them stand 30 minutes in the refrigerator.
3. Start broiler, set at Moderate, 350" F. Have a shallow pan ready.
4. Drain the kidneys but do not dry them. Place them in a flat baking pan and broil under moderate heat 10 to 15 minutes. Turn them several times and baste them with a mixture of the melted butter or margarine and lemon juice. Season with the salt and paprika.
