Broccolini with Matzo Crumble Recipe
Ingredients
| 2 bunches broccolini, trimmed, or 1 1/2 bunches broccoli, trimmed and cut into spears | ||
| Vegetable oil | 2 Tablespoon | |
| Scallions | 1 Bunch (100gm), thinly sliced | |
| Garlic | 1 Clove (5gm), minced | |
| Dried marjoram | 1 Teaspoon, crumbled | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| 1 sheet whole-wheat matzo, finely ground | ||
Directions
1. Bring 1/2 inch of salted water to a boil in a large skillet over high heat. Add broccolini; cover and cook, stirring frequently, until tender, 7 to 8 minutes. Drain and transfer to a platter. Cover loosely with foil to keep warm.
2. Wipe out skillet; add oil and heat over medium heat. Add scallions, garlic, marjoram, salt, and pepper. Cook, stirring frequently, until scallions are tender, about 2 minutes. Add matzo and cook, stirring, until crisp and lightly browned, 3 to 5 minutes. Spoon overthe broccolini and serve immediately.
