Broccoli Soup with Turmeric Cream Recipe

Join us @ www.helladelicious.com. Broccoli is one of my favorite vegetables and is a comfort food for me. It is also one of the Cruciferae family and as a result is an excellent cancer fighter, among other things. Broccoli has been proven to be especially effective in preventing lung cancer and as a result is highly recommended for anyone who is smoking or who has just quit smoking as a means of cleansing the lungs. This is a good way to cook broccoli as opposed to blanching it as many of it's vitamins and minerals are water soluble

Ingredients

 
2 qts Chicken stock or broth
 
1 head of Broccoli, in florettes
 
Turmeric
 
Homemade cream cheese
 
Himalayan crystal salt
 
Freshly ground black pepper
 
Kaffir lime infused avocado oil

Directions

If you use a rich broth this is really quick to make. Please see my video on chicken broth for a great way to make a rich broth. Bring the broth to a boil and then add the broccoli. Allow to come to a bright green. Puree. Add seasonings to taste.

For the turmeric cream simply add a bit of salt and turmeric to the cream cheese. Please see my cream cheese and whey video for the best way to make homemade cream cheese.

Kaffir lime infused oil is easy to make as well. Simply chop up kaffir lime leaves and add the the oil. Allow to stand two weeks and then strain.

Drizzle this oil over the soup before service for a great flavor addition.
