Broccoli Ring Recipe
The broccoli ring is a cooked and molded broccoli ring made with gelatin and hard boiled eggs. Flavored with beef consomme and mayonnaise, the broccoli ring is savory and spiced with a dash of worcestershire sauce. Chilled, it can be served on a salad platter.
Ingredients
2 envelopes gelatin
1/2 cup cold water
2 packages frozen broccoli, chopped
2 hard-boiled eggs, chopped
1 cup mayonnaise
1 can beef consomme
3 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1/4 teaspoon Tabasco sauce
Directions
Soak gelatin in cold water.
Cook broccoli according to package directions; cool.
Drain; chop fine.
Add hard-boiled eggs and mayonnaise.
Dissolve softened gelatin in heated consomme.
Add seasonings; blend well.
Let cool before stirring in broccoli mixture.
Pour into oiled ring mold; chill until firm.
