Directions

Heat a pan and add butter, onion, bell peppers, garlic and saute. Then add chicken broth, broccoli, carrot, thyme and pepper and bring it to boil. Lower the heat and simmer for 15 minutes. Allow it to cool and then blend until smooth. Pour it back into the saucepan and add cream, milk and cheddar. Bring it boil on a medium heat. Now add sauce thickener. Let the soup thicken a bit and serve.
