Broccoli With Basil Recipe
Broccoli with basil is a herbed vegetable recipe. Cooked and served with a basil garlic sauce made with pine nuts and cheese, the broccoli with basil is savory and nutritious as a side.
Ingredients
1 3/4 pounds broccoli, cut into florets, with stems peeled and sliced
1/4 inch thick
1 1/2 cups firmly packed fresh basil or parsley
1 clove garlic
1 tablespoon pine nuts or chopped walnuts
1 tablespoon grated Parmesan cheese
1/4 cup low sodium chicken broth
2 teaspoons lemon juice
Directions
In a large saucepan, bring an inch of unsalted water to a boil; add the broccoli and cook, uncovered, for 4 minutes or until just tender.
Drain well and transfer to a medium size bowl.
In an electric blender or food processor, whirl the basil, garlic, pine nuts, cheese, and chicken broth for 20 seconds.
Stir in the lemon juice, pour over the broccoli, and toss.
