Broccoli Sauce Recipe

This high on flavor broccoli sauce recipe awaits you!. It is most popularly enjoyed as a side dish. I prepare this broccoli sauce with vegetable as the main ingredient. Whenever I have south american friends visiting I always prepare broccoli sauce which is most loved by them. I would really appreciate a feedback on this recipe of broccoli sauce. Thank You.

Ingredients

 
2 tablespoons red wine vinegar
 
1/3 cup olive or vegetable oil
 
1/2 teaspoon salt
 
1 clove garlic, finely chopped
 
1/4 teaspoon freshly ground black pepper
 
4 ripe tomatoes, peeled, seeded and chopped
 
3 cups small broccoli flowerets, steamed for 3 minutes
 
2 teaspoons dried basil
 
1/2 cup chopped scallions, including green parts
 
2 hard-cooked eggs, chopped
 
1 cup shredded mozzarella cheese
 
1 pound whole wheat noodles, spaghetti or macaroni, cooked al dente and drained

Directions

1. In bowl combine the vinegar, oil, salt, garlic, pepper, tomatoes, broccoli, basil, scallions, and eggs.
2. Add the mozzarella cheese to the hot pasta and stir to melt the cheese. Top with the broccoli mixture. Toss and serve with freshly grated Parmesan cheese. This is a cold sauce for hot pasta.
