Broccoli Rice Pilaf Recipe

Ingredients
1/2 cup uncooked brown rice
1 cup plus 2 tablespoons water or unsalted chicken stock
1 cup fresh broccoli florets
Directions
1. Place the rice in a strainer, and rinse under cold running water.
2. Place the rice and the water or chicken stock in a 1-quart pot, and bring to a boil over high heat. Reduce the heat to low, stir the rice, and cover.
3. Allow the rice to simmer, covered, for about 50 minutes, or until the rice is cooked and the liquid has been absorbed. Do not stir the rice while it is cooking, as this can result in sticky rice.
4. Remove the rice from the heat, and let sit, covered, for 5 minutes. Meanwhile, bring a 1-quart pot of water to a boil. Add the broccoli, and boil for about 30 seconds, or just until the broccoli is crisp-tender. Drain the broccoli, stir it into the cooked rice.
