Broccoli Mushroom Soup Recipe
Broccoli Mushroom Soup is a delicious recipe for any weekday dinner. If you want to come out of your bland diet, this creamy soup can be your savior. I prepared after coming across the recipe in a regular blog. The broccoli puree with diced mushrooms, tendered bacons and vegetables gives this recipe a new dimension. One should never stop reinventing new recipes. And I swear whoever has made this one deserves all the credit.
Ingredients
3 to 4 ounces salt pork or bacon, diced
1 leek, thinly sliced (white only)
1 medium onion, thinly sliced
2 garlic cloves, minced Butter
4 to 5 ounces mushrooms, sliced
1 teaspoon minced fresh oregano
Dash cayenne pepper
2 to 3 cups broccoli puree
4 to 5 cups brown chicken stock
1 or 2 potatoes, scrubbed and sliced
1 or 2 tomatoes, peeled and chopped
Diced cooked chicken, turkey or ham (optional)
Salt and white pepper to taste
Minced fresh parsley and/or chives

Directions
In heavy saucepan, brown salt pork, remove with slotted spoon and set aside.
Add leek, onion and garlic, cover and steam until onion is translucent, adding butter if needed.
Remove lid, add mushrooms and saute until lightly golden, sprinkling with oregano and cayenne while cooking.
Remove with slotted spoon and set aside.
Add broccoli puree, stock, potatoes and tomatoes.
Cover, bring to gentle boil, lower heat and simmer until potatoes are just tender.
Add chicken, reserved salt pork, mushroom mixture and salt and pepper and heat through.

Remove lid, add mushrooms and saute until lightly golden, sprinkling with oregano and cayenne while cooking.

Add broccoli puree, stock, potatoes and tomatoes.

Add chicken, reserved salt pork, mushroom mixture and salt and pepper and heat through.
