Broccoli, Mushroom And Feta Cheese Salad Recipe
Ingredients
| Broccoli | 1 Bunch (100gm) | |
| 1 red onion, thinly sliced and separated into rings | ||
| 1/4 lb small mushrooms | ||
| Feta cheese | 1/4 Pound, crumbled | |
| Toasted sliced almonds | 2 Tablespoon | |
| VINAIGRETTE | ||
| Water | 1/4 Cup (16 tbs) | |
| Olive oil | 2 Tablespoon | |
| Lemon juice | 2 Tablespoon | |
| Garlic | 1 Clove (5gm), minced | |
| Dried oregano | 1/2 Teaspoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Trim broccoli. Peel stalks and cut into 1- X 1/4-inch (2.5 cm X 5 mm) strips. Cut tops into bite-size florets.
In salad bowl, toss broccoli with onion, mushrooms and cheese.
Vinaigrette: Combine water, oil, lemon juice, garlic and oregano; pour over vegetables and toss to mix. Season with salt and pepper to taste; toss again. Sprinkle almonds over top.
