Broccoli Mornay Recipe

Ingredients
1 1/2 lb broccoli
1/4 cup margarine
5 Tbsp wholewheat pastry flour
1 cup milk
1 cup cream
1 cup Gruyere or Cheddar cheese, grated
1 tsp salt
1/4 tsp white pepper
2 Tbsp dry sherry
1 tsp lemon juice
1 tsp fine herbs
1/4 tsp paprika
1/4 cup Parmesan cheese, grated
1/4 cup wholewheat bread crumbs
1/4 cup chopped pistachio nuts
Directions
Steam broccoli until tender.
Break into flowerets.
Melt margarine in a skillet and stir in flour.
Gradually add hot milk and cream, and stir until sauce thickens.
Add cheese and stir until cheese melts.
Season sauce with salt, pepper, sherry, lemon juice, herbs, and paprika.
Spoon drained broccoli into a baking dish and pour over sauce.
Sprinkle with Parmesan cheese and bread crumbs, and top with pistachio nuts.
Bake in a 350 degree oven for 10 to 15 minutes.
Optional: Add 1 cup of cooked shellfish to mornay sauce; or, layer 4 lightly sauteed fish fillets on top of broccoli before spooning over sauce.
