| Monterey jack cheese | 1 Cup (16 tbs) |
Directions
1. Place broccoli in a small bowl and microwave until thawed, about 3 minutes. Heat oven to 350°F.
2. In an ovenproof medium skillet over medium-high heat, melt butter. Add broccoli and cook, stirring until heated through, about 2 minutes.
3. In a medium bowl, beat together eggs and 3 tablespoons water. Add to skillet and cook, stirring, until halfway scrambled, about 2 minutes. Stir in cheese. Using the back of a spoon, smooth the top. Transfer skillet to oven and bake until moist but firm to the touch, about 10 minutes. To serve, cut into wedges. Serve warm or at room temperature.
