 1 pound broccoli, peeled, trimmed and cut into 1/2-inch slices
 1/4 cup olive or vegetable oil
 Mushrooms1/2 pound, trimmed
 Garlic2 Clove (5gm), minced
 Salt1 Pinch
 Ground black pepper3/4 Teaspoon
 Eggs8
 Parmesan cheese1/2 Cup (16 tbs), grated
 1 red bell pepper, seeded, cored, and cut in strips

Directions

Preheat oven to 350°.
Steam broccoli, covered, in skillet for 2 to 3 minutes in 2 tablespoons water or in the microwave oven for about 1 1/2 minutes: Drain well.
Heat oil in skillet over medium heat, add broccoli, mushrooms, and garlic.
Stir, cover, and cook 3 minutes.
In bowl combine salt, pepper, and eggs, beat lightly, and pour over broccoli.
Sprinkle with Parmesan cheese, arrange pepper strips in a spokelike fashion on top, and bake, uncovered, 15 to 20 minutes or until just set but not dry.
