Broccoli Coulis Recipe

Ingredients
1 tbsp (15 ml) butter
1 1/2 cups (375 ml) broccoli (mainly stems), cut into pieces
2 green onions, chopped
1 garlic clove, finely sliced
1/4 cup (60 ml) potatoes, diced
1 cup (250 ml) chicken stock
Salt and pepper
1/2 tsp (2 ml) chopped tarragon
Directions
– In a saucepan, melt butter and saute broccoli, green onions, garlic and potatoes without browning. Pour chicken stock into mixture and season with salt, pepper and tarragon. Simmer tor 20 minutes.
– Run mixture through blender, then return to saucepan and cook for 5 minutes.
– Adjust seasoning, then pour through sieve and serve.
