Broccoli Corn Bake Recipe
This Broccoli Corn Bake is one of the best corn and cabbage dishes that I've ever tasted. This seasoned vegetable casserole makes a perfect lunch ! Try this Broccoli Corn Bake for your next meal and let me know if you like it !
Ingredients
1 tablespoon instant minced onion
1 16 ounce can cream style corn
1 10 ounce package frozen chopped broccoli, cooked and drained
1 beaten egg
1/4 cup coarsely crushed saltine crackers
2 tablespoons butter or margarine, melted
1/4 teaspoon salt
Dash pepper
1/4 cup coarsely crushed saltine crackers
1 tablespoon butter or margarine, melted
Directions
Soak onion in 2 tablespoons water for 2 to 3 minutes; drain.
Blend corn, broccoli, egg, 1/4 cup crumbs, onion, 2 tablespoons butter, salt, and pepper.
Turn into 1 quart casserole.
Cover and refrigerate.
Before serving: Uncover casserole.
Mix 1/4 cup cracker crumbs with 1 tablespoon melted butter.
Sprinkle over vegetables.
Bake at 350° for 1 hour and 10 minutes. (If baked immediately after preparation, reduce baking time to 45 to 50 minutes.)
