Broccoli And Rice With Walnuts Recipe
Broccoli and rice with walnuts is a cooked rice preparation. Cooked in chicken broth or water, the broccoli rice is sherried to taste and has added scallions in it. With garlic for flavor, the broccoli and rice has a hint of soy sauce along with the crunchy delight of walnuts.
Ingredients
1/4 cup coarsely chopped walnuts or slivered almonds
1 tablespoon oil
1/2 package (2 1/4 cups) Broccoli Cuts
2 tablespoons sliced scallions
1 garlic clove, minced
1 cup chicken broth or water
2 tablespoons dry sherry (optional)
1 1/2 tablespoons soy sauce
1 cup Rice
Directions
Cook and stir walnuts in hot oil in large skillet until lightly browned; remove from skillet.
Add broccoli, scallions and garlic to oil remaining in skillet.
Cook and stir 2 to 3 minutes.
Add broth, sherry and soy sauce.
Bring to a full boil.
Stir in rice.
Cover; remove from heat.
Let stand 5 minutes.
Fluff with fork and sprinkle with walnuts.
