Ingredients
250g shelled broad beans
1 tablespoon vegetable oil
250g bamboo shoots, sliced
250ml Chicken Stock
1 teaspoon salt
1 teaspoon cornflour mixture
1 tablespoon sesame oil
Directions
Bring a saucepan of water to the boil, add broad beans and cook for 8 minutes until their skins split, Drain and peel off skins.
In a wok, heat vegetable oil, add beans and bamboo shoots and stir fry for 2 minutes.
Add stock and salt, cover and simmer for 2-3 minutes.
Stir in cornflour mixture until thickened.
