Ingredients

 
1 3- to 4-pound fresh beef brisket
 
2 cups water
 
1/2 cup chopped onion
 
2 cloves garlic, minced
 
2 bay leaves
 
3 tablespoons grated fresh horseradish
 
2 tablespoons vinegar
 
1 tablespoon prepared mustard
 
1/2 teaspoon salt
 
Dash cayenne
 
Dash paprika
 
1/2 cup whipping cream

Directions

Trim excess fat from meat; place meat in 4-quart Dutch oven.
Add water, onion, garlic, and bay leaves.
Cover; simmer till meat is tender, 2 1/2 to 3 hours.
Drain meat; slice.
Meanwhile, in bowl combine horseradish, vinegar, mustard, salt, cayenne, and paprika.
Whip cream till soft peaks form; fold in horseradish mixture.
