Directions

MAKING
1) Peel the brinjals and cut lengthwise into 1/2 inch thick slices.
2) Drop into milk and cover and keep aside for 5 minutes.
3) In equal parts, mix the soy flour, and breadcrumbs, and season with salt and pepper.
4) If desired, add in a pinch of peri-peri for enhanced flavor.
5) Remove the brinjal slices and coat with the flour mixture.
6) In a skillet, heat oil.
7) Add in the brinjals slices and fry till well browned on both sides.

SERVING
8) Serve hot with tomato sauce.
