Indian Style Brinjal Curry Recipe

Ingredients
Brinjal-6(chopped and keep inside water)
Methi leaves-1cup(wash and chop finely)
For Seasoning:-
Oil-1tbsp
Mustard seeds-1tsp
Onion-1 1/2 (finely chopped)
Curry leaves-20(finely chopped)
Ginger and Garlic paste-1+1tsp
Tomato-1 finely chopped
For Grinding:-
coconut-4tsp
Coriander leaves-1tbsp
Onion-1
Tomato-1
Roasted gram-1/2 hand full
sambar pd-2tsp
water as required and grind it smooth paste
Directions
In a pan add oil when it is hot add mustard seeds,allow to pop up
Now add curry leaves, onion and fry till golden brown.
Now add methi leaves and fry till they become soft.
Add ginger and garlic paste,brinjal and fry till they are cooked.
Now add tomato and allow them to become mashy.
Add grinded masala,salt water little and allow bublles to come.
Taste it and adjust the salt.
Finally when it is ready,transfer to a serving bowl.
Ready to eat with hot rice,chappati...........
