brinjal curry Recipe
Ingredients
2 to 5 brinjal,1-stalk methi leaves,1tsp-ginger paste,1tsp-garlic paste,mustard-1/2tsp,oil-2tsp,1-chopped big onion,1- big chopped tomato,curry leave-1stalk,sambar pd-1 1/2 tsp,salt to taste,water-little.
Directions
first chop brinjal and keep inside the water.keep a bowl on gas when it is heat put mustard allow till it splutter,then add curry leaves,onion and fry till it changes its colour to brown,then add chopped methi leaves fry till it becomes soft,now add ginger garlic paste,brinjal and fry till it changes colour.now add tomato fry till it becomes soft.then add samabar pd, salt,water little and stir it and allow to cook.when it is cooked add coriander and grated coconut and serve with chappati,roti.

This Eggplant curry recipe is good.With poori and parantha it has great taste.
