Directions
1) Peel and wash the brinjals.
2) Slice thickly.
3) Grease a baking dish.
MAKING
4) Arrange 3 slices of brinjal in the baking dish.
5) Over each slice place a slice of tomato, some garlic, salt and pepper.
6) Place another slice of brinjal over the top.
7) Drizzle with oil.
8) Place in the oven and cook till tender.
9) Baste the brinjal now and again to prevent drying.
SERVING
10) Serve hot, sprinkled with little pepper.
