Directions

In a heavy skillet over medium-high heat, heat 1 1/2 inches olive oil to 360°F, or until a 1 -inch cube of bread browns in about 60 seconds.
Meanwhile, spread 1 wrapper with 1/2 teaspoon of the harissa.
Fold in the edges to form a square and fasten down the edges with 1 tablespoon of the mashed potatoes.
Holding the wrapper in a cupped hand, break an egg into the center and add 1 tablespoon of the onions, 1/2 teaspoon of the capers, 1 teaspoon of the parsley, and 1 teaspoon of the cheese.
Coat the outer edge of the packet with a little of the egg white.
Season with salt.
Carefully fold one tip of the packet over to form a triangle, and press the edges to seal.
Using a slotted metal spatula, slide the triangle into the hot oil.
Spoon the hot oil over the brik as it fries.
Turn the brik over and brown the other side.
Using the spatula, transfer the brik to paper towels to drain briefly.
Serve at once.
Repeat to fill and cook the remaining wrappers.
